Spicy Chicken Breast With Couscous

Follow This Easy Method:

1) Begin by mixing together the curry paste, chutney, turmeric and olive oil in a mixing bowl. This will create the marinade for your chicken. Then Season with a dash of salt.

2) Next, halve your chicken breast horizontally then add to the marinade mixture. ensure the marinade is covering the chicken evenly. then set aside for a minimum of 20 minutes (if possible leave overnight for best results)

3) Now you need to heat up your grill pan over medium heat before placing the chicken on top. cook for 5-6 minutes on each side (or until golden)

4) Whilst your chicken is cooking. Weigh up your serving sizes of couscous and add the hot vegetable stock. cover the couscous with a lid and put aside for 5 minutes until water is fully soaked.

5) Serve your chicken and couscous straight away with a sprinkle of coriander on top, or section your food into containers for meal preps.
