Meatballs with Fennel & Balsamic Beans & Courgette Noodles

Follow This Easy Method:

1) Combine the mince, egg, dried oregano and grated garlic in a bowl and season well. Mix ingredients together, and then section it into roughly 16 small-medium sized balls.

2) Add your oil to a large saute pan and heat on a medium-high heat. Once the oil is hot, add your meatballs to fry until browned all over.

3) Once browned set aside meatballs. Now reduce the heat of your pan and add the fennel, carrots and sliced garlic. Cook until softened. (roughly 5 minutes or more)

4) Now stir in the passata, balsamic vinegar and bouillon with the vegetables. Once all combined add the meatballs, cover and gently cook for 20-25 minutes.

5) Whilst that's cooking, in a separate non-stick pan heat 1 tsp of oil. Add your spiralized courgette and heat until softened.

6) Ro serve combine your courgette noodles with your meatballs on top, and fennel fronts bedded round.
