Chicken, Red Pepper and Almond Traybake
Follow This Easy Method:
1) Begin by preheating your oven to 200C/180C fan/gas 6.
2) Using a large bowl, mix your chicken, onions, potatoes and peppers with the season.
3) Then in a separate bowl, combine the garlic, spices, oil and lemon zest and juice. add this mixture to the chicken, pouring evenly so covered.
4) Put the chicken on a baking tray, and roast for 40 minutes/ remember to turn over the chicken halfway after putting it in the oven.
5) When there are 8 minutes remaining for the chicken to be cooked, add the almonds to the traybake.
6) Serve the dish in bowls with optional yogurt and parsley or coriander.
