Chicken and Tomato Spiced Curry
Follow This Easy Method:
1) Using a flameproof casserole dish, heat 1 tbsp of oil over high heat. once hot, place chicken in a dish to cook for 5-7 minutes or until golden and cooked through. then set aside.
2) Put the remaining amount of oil in the dish alongside your onion and cook for 3 minutes.
3) Then add your red peppers for a further 2 minutes
4) Now you need to stir in the garlic, ginger and curry paste. (spread paste evenly over the content of dish)
5) Now add the tomatoes and 200ml of water. bring to the boil, then reduce heat and leave to simmer (with the lid on) for 10 minutes until sauce is thick.
6) Transfer your chicken to the dish and cook for 5 minutes.
7) Whilst that is cooking, cook the basmati rice from pack instructions.
8) Sprinkle the coriander to serve.
