1) Using a non-stick paper line a medium-sized baking tray then preheat your oven to 200C/180C fan/gas 4
2) In a mixing bowl, combine the peanut butter, garlic, madras curry powder with a drizzle of soy sauce and lime juice.
Tip: Add boiling hot water to the sauce if the consistency is too thick to spread.
3) Cut your chicken breasts into thick strips, dunk into your peanut butter sauce then place on a baking tray.
4) Leave the chicken in the oven to cook for 8-10 minutes or until juicy and tender.
To Serve:
1) Cut the cucumber into thin strips and add to chicken on the side once ready to serve.
2) Or section your food into containers for meal preps.
