Chicken Piccata With Garlicky Greens & New Potatoes

Follow This Easy Method:

1) Using a large pan, boil the new potatoes for 8-10 minutes until tender. With 3 minutes left on the boil, add the green beans and spring onions. Once the time is up, separate the greens and potatoes.

2) Slice your chicken breasts down the centre to create a deep slit then graze the inside with your olive oil and season.

3) On a medium heat, cook the chicken on a frying pan for roughly 4 minutes on each side (or until golden). Then add the stock, capers, lemon juice and zest to the pan. Leave it to summer, slowly reducing the heat.

4) After it has been simmering for a few minutes, add the cooked potatoes for a further minute.

5) Using a separate frying pan, fry your garlic for 1 minute. Then add the greens and garlicky oil. Finish your dish with seasoning then serve with parmesan scattered on top!
